So a couple of days ago Mr. N and I took Bella for a forest walk and ended up picking 9 Kg of mushrooms (supplilovahveroita- or yellow foot/ chanterelle). The amount was incredible and the mushrooms were totally clean even though they were huge in size. We ended up baking pies for all family members so I thought I would give the recipe for everyone to follow. Its super simple and can be adjusted many ways. This is perfect on a cold fall evening under a cozy blanket.
Ingredients:
mushrooms (suppilovahvero- lets say a couple of hand fulls)
2-3 garlic cloves
2 onions or leak
cube stock (kasvisliemi kuutio)
1 tbl honey Dijon mustard
pepper/salt
fresh oregano
pancetta
cream
sour cream (kerma viili)
egg
cheese (ex. grated mozzarella)
* can add an extra main ingredient such as broccoli/ spinach/ chopped tomatoes/ paprika/ chili etc)
Basically, slice the onions, garlic and place into a hot pan that has a bit of butter and oil in it. Let them begin to sweat and add the pancetta to add a smokey flavour. Then add the chopped mushrooms and don't be worried if they let out a lot of water (just let it reduce by simmering). We also used a frozen bag of spinach that we had laying around in the freezer, but basically you can add any extra ingredients, if you want. Then add the stock cube and additional spices which you enjoy. Add a dollop of cream to bring the flavours together and let it thicken into a paste-style mixture.
Now, into a bowl, mix an egg with the sour cream and add grated cheese. Once the paste from he pan has cooled down, add it into this bowl and mix well. For the base, we bought a ready-made once to save time. So, roll the frozen base into a buttered base and add the mixture in the middle. Add cheese on top and place into an oven (about 190 C) for about 30 minutes until you see the colour becoming golden brown on top. Enjoy!
