Gingerbread Cookies


The entire house smells like Christmas with the scent of gingerbread cookies lingering through the rooms. We bought some glögi tea from Porvoo and this suited perfectly with the home made cookies. 


Here's a great recipe for making home made gingerbread dough (which I'm going to try next year) that I found from an interior magazine.  We had some ready made sheets in the freezer, so this year there was a bit of short cutting :)

Needed Ingredients

1 dl dark syrup
1 dl caster sugar
2 tsp Cinnamon
1 tsp cloves
125 g butter
1 egg
4 1/2- 5 dl flour
1 tsp baking soda

Start by boiling the syrup, sugar and the spices. Then add the butter and stir until it has melted. While you are waiting, stir the baking soda into the flour. Then add the egg into the syrup and the flour mixture. Mix well. Cover the mixture with a cloth and let it cool in the fridge preferably over the night. 

Roll out the ginger bread mixture and make the cookies with the molds. Bake the cookies in an 200C oven for about 7-12 minutes.
