Whats for Lunch honey?

Its Friday again, which means its time to leave the stressful week behind and enjoy these wonderful upcoming days! It has been raining all morning and I have been lucky enough to work from home. By 9.00 am I had managed to clean the house, do laundry and answer a couple of emails. 

Mr. N also has a free day today, so I surprised him with an Asian influenced lunch. A bed of garlic chili spinach with  teriyake chicken & lime. Basically, the previous day I marinated the chicken breasts with oyster sauce, oil, mixed peppers, sweet chili and soy sauce. Then today, I oven cooked the chicken in 190 C for about an hour and took it out to rest. Meanwhile, I pan fry the spinach by first frying garlic and chili in hot oil. I gradually add the spinach leaves and cook them only for a short amount of time so they do not loose all shape. While the spinach cooks, I cut the chicken breasts into even slices. After the spinach is done, place it in the middle of your plate. Now, add the sliced chickens on the same pan where you fried the spinach and cook it there for a couple of minutes. For more seasoning, add teriyake sauce, lime juice and any other additional flavours you please (ex. grated ginger, lemon grass, sesame seeds, hoisin sauce). Once the chicken soaks the additional flavour and colour, place these on top of the spinach. I then added some parsely for garnishing. Bon appétit and have a great Friday everyone! * We bought some new rosé wine yesterday and it seems to be burning a hole in the fridge :) I may have try some this evening*
