Blueberry Hallumi


The house is clean & it's time for some lunch. 

Since safari is so in right now, I've inspired myself by going through old booklets and looked at Indian, African and Egyptian pictures. silk pants, heavy chains and cowboy boots- that's what I'm loving at the moment. I've been looking for a pair of gene-pants forever and finally found fabulous safari green ones from Zara's new collection... I'll have to post a picture of them later.. but anyways, my lunch was inspired around these themes. Lots of Camel beige and okra yellows and a forkful of salty sweetness.

This simple lunch or snack is great for any time of the day & when having guests over because it only takes a couple of minutes to make. Blueberries and halloumi work harmoniously together because the salty cheese combined with the sweetness of the berry allows the flavours to come out better.

All you need to do is cut halloumi cheese into relatively thick slices and pan fry in butter until golden brown. Arrange these nicely on plate and garnish with basil leaves, black pepper and blueberries. Add a side dip if you wish- I used pesto.  Cheers, enjoy with a cold glass of dry white wine!
