White wine chicken salad


What's for lunch honey?

ingredients

3-4 chicken breasts
4 cloves of garlic
1 carrot
1 onion
rosemary
2-3 dl of white wine
1-2 dl vegetable stock ( 1 veg. stock cube/kasvisliemi kuutio)
salt/pepper
soy sauce
mixture of salad leaves
butter 
drizzle of cream (optional)


Begin by chopping the carrots, garlic cloves and onions. On a hot pan, fry the chicken breasts from both sides so they gain a nice golden colour. While frying, add a bit of soy sauce, black pepper, rosemary and a pinch of salt. After a couple of minutes of cooking on each side, place them on an oven dish and leave to rest.  On the same pan begin frying the chopped ingredients (you may need to add more butter if the pan is too dry). After they sweat for a while, add the white wine ( and a drizzle of cream if you wish) and let it boil for some minutes. Then add the mixture on top of the chicken and place the  dish into the oven for about 45 minutes at 190 C degrees. 
Once the chicken has cooked, take it out of the oven and leave it to cool. Plate a mixture of favourite salad leaves and add slices of chilled chicken on top. Add herbs of choice as garnish and for freshness! BTW, the chicken tasted almost better the next day after it had been sitting in the fridge over night, so enjoy the left overs!
